Spicy Coconut Prawns (00:05:41)
Method
Wash and dry prawns, set aside.
Beat eggs, honey, cayenne, chilli, onion, garlic, lime juice and salt. Pour into shallow bowl.
Combine flour, cornflower and curry powder in a shallow bowl.
Combine bread crumbs, coconut and orange zest in a shallow bowl.
Dip each prawn into the egg mix, then the flour, again into the egg mix and finally, dip into the bread/coconut mix. Set aside. Repeat for each prawn.
Pour sufficient oil to cover the prawns into a frying pan, and warm over a medium-high heat.
When temperature is reached (1650) add the prawns a few at a time.
Fry for 1-2minutes each side until golden, drain on kitchen roll for a few moments before serving.
Try to skim the oil between batches to remove any surplus crumb as this will adhere to the next batch and spoil their appearance.
