Chicken and Chorizo Pasta (00:05:34)
Method
Bring large pan of salted water to bring
Add olive oil to frying pan & add the chicken & cook until no longer pink
Once browned, take the chicken off & put it to one side
Add Chorizo to the used pan & cook for a few minutes to brown slightly (no need to add more oil)
By this point your water should have come to the boil, so add your pasta (takes approx 11-13 minutes)
After a few minutes add the onions to the chorizo
After a couple of minutes add the chicken back into the pan & stir
Add mixed herbs, some chillies to taste (optional), a good glug of red wine, a tin of chopped tomatoes, half a jar of Pestata sauce & black pepper
Stir, then turn down heat & leave to simmer with a lid for approx 10 minutes, whilst pasta cooks
Once pasta is cooked, drain & serve
Add Chicken and Chorizo sauce all over the top, eat and enjoy
Tip – For a little bit extra, add some grated Parmesan cheese over the top!
