Smoked Bacon carbonara pasta sauce (00:11:40)
Method
First fill a large pan with water for pasta The peel and dice the onion and garlic very finely
In a medium sized frying pan heat some oil then add the onions and garlic sweat off for 4 min until soft but not coloured.
Dice the smoked bacon ready to fry off . Remove onions and garlic out of the pan leave to one side wipe the pan out and add more oil heat before adding bacon.
Fry the bacon and colour a little before placing the onions and garlic
Add the double cream turn the heat down to simmer for 3 min until cream starts to thicken.
Once the sauce thickened allow to cool a little before adding the egg yolks. Do not add back to the heat once yolk has been added or it will spit the sauce.
Drain off the pasta when its cooked for 10 mins add back to the pan season with salt and pepper and butter.
To serve place a good portion of spaghetti on a plate and cover with the carbonara sauce and finish with fresh coriander
