My homemade apple pie

Method

Mix plain flour, corn flour, custard powder, baking powder & icing sugar in a bowl
Dice butter & add to bowl
Rub the butter into the flour mixture
Make a small hole in the middle of the mix & add 1 beaten egg
Mix together (add more flour if too sticky) and make into ball
Cover bowl with plate & chill in fridge for 10 mins
Preheat oven to Gas mark 3.5
Dice apples, add to pan & add lemon juice
Add 3 tbsp of water & 2 tbsp of sugar
Cook on medium heat
Grease pastry tin with butter
After 10 mins, take pastry out of fridge
Leave 1/3 of pastry aside
Continue to knead 2/3 pastry with into a ball just larger than the tin base & add to tin
Place apples in pastry
Roll out remaining 1/3 of pastry into disk shape (approx size of top of pie)
Place pastry over top of pie. Pinch the edges & the top together
Sprinkle 2 tbsp of sugar on top
Cook for 40 mins
Serve & enjoy
